Christy’s Pancakes…..

So, I was on my picky eater’s forum last week and someone mentioned they’d finally found a hamburger they thought they could eat!

pancake-burgerAre you kidding me??  That’s AMAZING!!….I bet I can do that….maybe……

SO….(Inspired by Jim’s Pancakes) sure enough, yesterday morning we had a go at it and I’d say we were pretty successful!! (Though I still have much pancake research and development ahead of me…)

We may not have been ready for a Schnegel – Burger but we sure made some Schnegel-Fries!

Best part was….they didn’t even ask for butter or syrup and not only did they gobble them up but were begging for more!

Luckily there was batter left over….in random colors….so we made a few more crazy things and everyone was happy….and full….

Okay, so here’s how I did it.

1.  I took regular ol’ Aunt Jemima Complete Pancake mix (just add water) and added water.  I did add a little extra just because I was unsure if it would flow well but I probably could have done without it.

2.  Then, I divided it into 4 squirt bottles (The kind you use to hold ketchup & mustard at picnics…..97 cents at Walmart).  You could use anything though.  Jim from Jim’s Pancakes uses an old washed out ketchup squirt bottle.

3.  I then put food coloring into each container and shook it up.

4.  I set my skillet on the burner and set my temp to about 3 (low) on the knobby thing.  At one point I moved it up to 3.5 but they started cooking a little faster than I wanted.

5.  I then started drawing my pictures.  Outlines first so they hold the rest of the batter and so they’ll be just a tad darker than the rest and give a good outline.  You could easily do this with plain batter that has no color and just let the outlines set to a darker brown before filling in the centers which will be more white.

6.  I waited until there were bubbles coming up through and then I very carefully flipped them over.  I let them cook extra long on the other side to make sure they were cooked thoroughly.

Mine were thin and a little crispier than they would have been if I’d added less water.  You can, apparently, get recipes from Jim’s Pancakes for the best consistency if you sign up for his newsletter.  I’m a do-it-yourselfer & I have 4 kids and no time to REALLY research all this so I think I’ll stick with what we’re using now.  Seems to work well enough to keep the natives happy!

So there ya go! Happy Pancaking!
